Briony's picky bits

On Tuesday 23rd June, cook Briony May Williams joined us in studio to show us a quick and simple picky bits dinner to watch with the World Cup. She made a traditional item from each of the three host countries: Mexico, Canada and the USA.
Elote (Mexican Street Corn)
Ingredients (serves 4):
4 corn on cob, husked
2 Tablespoons mayonnaise
2 Tablespoons sour cream
½ cup feta cheese
chili powder, or tajin
1 lime, quartered
fresh chopped coriander, for garnish, optional
Method:
Bring a large pot of salted water to a boil over medium-high heat.
Add the ears of corn and cook until tender, about 10 minutes (or cook them in the instant pot).
(Optional step): Brush corn with melted butter and grill corn on medium heat until slightly charred.
Mix the mayonnaise and sour cream together and spread a thin layer all around the corn ears.
Sprinkle generously with feta cheese and then desired amount of tajin or chili powder.
Serve garnished with cilantro, and with a lime wedge on the side for squeezing on top
Poutine
Ingredients (serves 4-6):
1kg Oven french fries or chunky chips
Beef gravy granules
dash of Worcestershire sauce or ketchup
275g Cheese curds
Method:
Cook your chips to packet instructions
Make gravy - get some hot water and mix with gravy granules until it is no longer lumpy.
(option) You can add a dash of Worcestershire sauce or ketchup to give it a bit of Canadian depth.
Then we want to pour the gravy all over the chips and toss them so they are covered.
Finally, we have our cheese curd. We add the cheese curds on top, a sprinkle of ground pepper for a bit more flavour and it's ready to be served!
Ranch dressing
Ingredients:
150g Greek yogurt
50g mayonnaise
25g cream cheese
2 tbsp olive oil
2 Lemons, juice and zest
½ tsp Dried Dill
½ tsp Onion powder
3 tsp honey
Handful fresh parsley, chopped
Handful fresh chives, chopped
Method:
Add in to a mixing bowl: Greek yogurt, mayonnaise, cream cheese, olive oil, 2 lemons, juice and zest, dried Dill, onion powder, honey, fresh parsley and fresh chives.
Mix all the ingredients together until it is smooth and everything is combined, then we can pour it over our salad and give it a toss to cover.
